01 - Line an 8x8-inch baking pan with parchment paper, allowing overhang on opposite sides for easy removal later.
02 - In a large mixing bowl, add oats, crispy rice cereal, dried apple, shredded coconut, chopped peanuts, cinnamon, and salt. Mix well to distribute evenly.
03 - Combine peanut butter, honey, and melted coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until smooth and pourable. Remove from heat and stir in vanilla extract.
04 - Pour the warm peanut butter mixture over the dry ingredients. Fold thoroughly with a spatula until all components are evenly coated and no dry patches remain.
05 - Transfer the mixture to the prepared pan. Use the back of a spatula or your hands to press firmly and evenly across the entire surface, compacting tightly to ensure bars hold together.
06 - Refrigerate for at least 1 hour until completely firm and set.
07 - Lift the slab from the pan using the parchment overhang. Place on a cutting board and slice into 12 equal bars. Store in an airtight container in the refrigerator.
