01 - Set the oven temperature to 400°F.
02 - Remove loose outer papery layers from the garlic head, keeping cloves intact.
03 - Slice approximately 1/4 inch from the top of the garlic head to reveal the tops of the cloves.
04 - Place the garlic head cut side up on aluminum foil or in a small baking dish.
05 - Drizzle olive oil evenly over the exposed cloves, then sprinkle with sea salt and black pepper if using.
06 - Loosely wrap the garlic head in foil or cover the baking dish; roast in the oven for 35 to 40 minutes until cloves are soft and golden.
07 - Allow the garlic to cool slightly, then extract the roasted cloves by squeezing. Use immediately or refrigerate in an airtight container up to one week.
