02 - Bring the liquid to a rolling boil over high heat. Immediately reduce heat to maintain a gentle simmer. Cover the pot and cook for 2.5 hours. Skim any foam or impurities that rise to the surface during cooking.
03 - Add the quartered potatoes, carrot chunks, celery pieces, and parsnip chunks to the simmering broth. Continue simmering covered for 15 minutes until vegetables begin to soften.
04 - Gently submerge the cabbage wedges into the broth. Simmer for an additional 20 to 25 minutes until both the cabbage and meat are fork-tender.
05 - Carefully transfer the brisket from the pot to a cutting board. Allow the meat to rest for 10 minutes to redistribute juices. Slice the beef against the grain into thin slices.
