# Expert Advice:

01 -
  • The smoky steak against cool crisp vegetables creates that perfect hot-cold contrast that makes summer eating feel complete
  • Everything comes together in under 40 minutes but tastes like you spent all afternoon planning it
02 -
  • Letting the steak rest for those full 5 minutes makes the difference between juicy and dry—do not skip this step
  • Slicing against the grain is non-negotiable with skirt steak or the meat will be tough and chewy no matter how perfectly you cook it
03 -
  • Pat the steak completely dry before seasoning, as any moisture will prevent proper searing and those beautiful char marks
  • Let the dressed salad sit for 5 minutes before serving so the couscous absorbs some dressing
