01 - Bring a large pot of salted water to a boil. Add cauliflower florets and garlic cloves. Cook for 10 to 12 minutes, until cauliflower is very tender.
02 - Drain the cauliflower and garlic thoroughly and transfer to a food processor or a large bowl.
03 - Add butter, sour cream, salt, and pepper. Process or mash until smooth and creamy.
04 - Taste and adjust seasoning as needed. Stir in fresh chives if desired.
05 - Serve warm, garnished with additional chives or a pat of butter.
