# Expert Advice:

01 -
  • The garlic butter sauce transforms mild halibut into something restaurant-worthy but comes together in minutes
  • Its incredibly forgiving, even if you accidentally overcook it by a few minutes the fish stays tender and moist
02 -
  • The fish continues cooking after it comes out of the oven, so pull it when it's just barely opaque in the center
  • Pat the halibut completely dry before placing it in the dish, as excess water makes the sauce separate and look oily
03 -
  • Let the fish rest for 3 minutes before serving so the juices redistribute evenly
  • Warm your plates in the oven for the last minute of cooking time, hot food on cold plates loses its magic too fast
